CLART 291 - Maître d’

Provides the student with experience functioning as a dining room manager. Guest relations, leadership and decoration/room design will be discussed. Prerequisite: CLART 111 and 143 .
Course Objectives
Upon successful completion of this course, students will be able to:
- Demonstrate basic operations on the POS system. [REASON]
- Demonstrate basic sanitation and safety in the restaurant industry. [REASON]
- Apply principles of mise en place for a dining room. [REASON]
- Market menu items to guests and subordinates. [COMMUNICATE]
- Organize and implement daily tasks of dining room manager. [REASON]
- Organize and implement a hands-on demonstration & oral presentation. [COMMUNICATE]
- Demonstrate the ability to lead a team. [ACT]
