CLART 291 - Maitre d’
2.0 Credits Provides the student with experience functioning as a dining room manager. Guest relations, leadership and decoration and room design will be discussed. Prerequisite: CLART 111 and 143.
Course-level Learning Objectives (CLOs) Upon successful completion of this course, students will be able to:
- Demonstrate basic operations on the POS system. [REASON]
- Demonstrate basic sanitation and safety in the restaurant industry. [REASON]
- Apply principles of mise en place for a dining room. [REASON]
